I don’t know about you, but sugar is my nemesis! I have such a sweet tooth and love anything with chocolate or from the cake counter in my local cafe. So to help me fulfil my naughty treat cravings I went online looking for a healthy alternative that I could make at home. It’s fantastic the amount of people, brands, chefs and health foodies that are sharing recipes on social platforms for those of us that need a little guidance now and again! I came across this supper tasty, really easy to make and not so naughty sweet treat recipe on @befitsnacks.
Caramel Almond Butter Chocolate Truffles
1 small pack of pitted dates
1 cup almond butter
1/3 cup almond milk
1 pack of dark chocolate (originally recipe makes own chocolate, but I like to use 85% dark chocolate)
Optional nuts to garnish
In a food processor (I use my Nutri Bullet) blitz together the dates and almond milk until gooey. Transfer to a bowl and mix in the almond butter until a sticky consistency. Lay grease-proof paper on a tray and place spoonful’s of the mixture down. If I’m feeling fancy I try and quenelle the mixture! Place the tray in the freezer. After a few hours, the truffles are ready to be coated in chocolate and garnished if you like. Break up the chocolate in a heat-proof bowl and place the bowl over a couple of inches of hot water to melt it. Remove the bowl from the pan once the chocolate is melted and one at a time drop the truffles into the chocolate to coat them. Place them back on the tray and either leave as is or sprinkle with chopped nuts (walnut, pistachios, almonds), then place them back in the freezer. In another couple of hours, they are the perfect after dinner treat!
I usually store my batch in the freezer, and allow them to soften for a minute or two on the side before eating.
